These rich and chewy peanut butter bars with a layer of dark chocolate are the perfect blend of sweet and salty and need no baking at all!

They take just 10 minutes to put together (excluding chill time) and make a delicious snack for an on-the-go pick-me-up. No need to turn on your oven, these chewy squares are easy to make ahead or freeze for whenever you need something sweet.

The ingredients

  • Rolled Oats
  • Peanut Butter : I use my homemade peanut butter for this recipe, but you can use any creamy peanut butter you like – just make sure it’s pourable.
  • Honey : To make this recipe vegan, swap out for maple syrup and extra oats.
  • Coconut Oil
  • Vanilla Extract
  • Dark Chocolate Chips: Use high-quality dark or semi-sweet chocolate chips with a high cocoa percentage.

How to make peanut butter bars

Make The Peanut Butter Layer: Add the oats to a food processor and blend until you get a flour-like consistency. Then, add the peanut butter, honey, salt, vanilla extract, and coconut oil and blitz until well combined. Transfer the peanut butter mixture to a lined baking tray or silicone mold, using a spatula to spread until it’s an even layer in the pan. Place in the refrigerator/freezer to set a little.

Steps for preparing the peanut butter layer - 10

Make The Chocolate Layer: Using the double boiler method, add the chocolate chips to a bowl over a pot of simmering water and melt. You can also microwave them in a microwave-safe bowl in 15-20-second bursts until melted. Stir well.

Pour the melted chocolate on top of the peanut butter layer, then return to the fridge/freezer to set.

Once the peanut butter chocolate bars have set, lift them from the tin (having parchment paper larger than the tin will help) and slice them into squares or bars.

Instructions

  • Turn out and press into a baking tray or silicone mold so it forms an even layer, then refrigerate.

  • Melt the chocolate chips in a heat-proof bowl over a double boiler, stirring occasionally. You can also do this in the microwave in 10-15-second bursts.
  • Pour the melted chocolate over the peanut butter layer and return to the fridge to completely set.
  • Once set, slice into squares or bars and enjoy.
