This pink strawberry baked oatmeal is blended and baked to a cake-like consistency with an optional hidden cheesecake center! All you need is just 7 ingredients and under 30 minutes for this , gluten-free, refined-sugar-free, and optionally dairy-free strawberry oatmeal!

If you want something that tastes like strawberry cheesecake cake for breakfast then this strawberry baked oatmeal is for you – using the current Tiktok trend of ‘blended baked oatmeal’ that transforms creamy oatmeal into a cake-like treat, this breakfast combines blended strawberry oatmeal with a hidden cream cheese ‘cheesecake’ center.

And if you’re worrying that this is sounding like an unhealthy way to start the day – keep reading. The strawberry oatmeal contains just 5 ingredients using natural ingredients and an unrefined sweetener. Even better, the ‘cheesecake’ center is simply cream cheese (I use homemade with just a pinch of salt when making it) and is 100% optional too.

In fact, I’m so obsessed with this new way to eat ‘cake’ for breakfast that I’ve already shared recipes for chocolate peanut butter baked oatmeal , chocolate chip cookie-style baked oatmeal , and chocolate-baked oatmeal . Now, this strawberry cheesecake baked oatmeal takes a fruitier twist!

Even better, If you’re wanting to decide exactly how gooey vs. cakey you want the strawberry oatmeal to be, no problem! Just adjust the cooking time by a few minutes for something that is a little more tender vs fluffy and cakey. I don’t think you’ll have any trouble convincing the kids to try this bowl of oatmeal , that’s for sure!

The Ingredients

Ingredients for strawberry and cream oats - 12
  • Oats: make sure to use rolled oats (not steel-cut) or already-prepared oat flour . I haven’t tried this with instant oats, but I imagine it should work okay. Make sure to use gluten-free certified oats if necessary.
  • Strawberries : I used frozen strawberries as I had some in my freezer already. This will work with fresh or frozen.
  • Cream Cheese: I use homemade cream cheese with just a pinch of salt. You could also use a dairy-free alternative – make sure to use one with a neutral flavor, and it’s important to note that different brands may react and melt differently. For a sweeter, more ‘authentic’ cheesecake filling , feel free to add a tiny amount of powdered sugar – you can make your own at home with granulated unrefined sugars and even sugar-replacements.
  • Milk: you can use any dairy or non-dairy milk – I like to use oat milk or coconut milk for this strawberry oatmeal.
  • Baking powder: to help provide a lift to the baked oatmeal for a more cake-like texture.
  • Maple syrup: or the sweetener of your choice such as agave, honey (not vegan), or even a sugar-free alternative.
  • Salt: just a pinch will enhance flavor.

Optional Add-Ins

  • Vanilla extract : mixing a little vanilla either into the strawberry oatmeal mix or the cream cheese will boost the ‘cake’ vibes. I use homemade vanilla extract though you could also use vanilla paste or vanilla powder.
  • White chocolate: for a more decadent treat, you can drizzle a little white chocolate over the top of the baked oatmeal. For a healthier option, you could use sugar-free/low-sugar dark chocolate .
  • Extra strawberry: if you want a stronger strawberry flavor, feel free to use strawberry powder within the batter or even a natural strawberry flavoring. You could also add a small spoonful of strawberry jam to the center on top of the cream cheese (yummy!) or swirled it into the top of the batter (warm it first and optionally dilute with water if needed).
  • Chia/Flax: add 1/2-1 Tbsp seeds to add extra protein to the baked oatmeal.

How To Make Strawberry Cheesecake Baked Oatmeal

Preheat the oven to 355ºF/180ºC. For the instructions on how to make this in a microwave, read past the oven method.

First, add the oats to your food processor and blend into a floury consistency. If you’re using oat flour then skip this step.

Then add all of the remaining ingredients apart from the cream cheese to the food processor and process until smooth and well combined. Taste and adjust the sweetener if preferred.

Pour the strawberry oatmeal into a heat-proof bowl or ramekin and then spoon the cream cheese into the center, gently pressing it down so it’s hidden in the center of the oatmeal.

Bake the strawberry cheesecake oatmeal for around 15 minutes – it’s okay if the oatmeal is slightly gooey still. Feel free to increase the time by 2-3 minutes for drier results.

You can then serve the oatmeal immediately or top with more sliced strawberries and optionally a little coconut whipped cream or white chocolate drizzle.

To Make In The Microwave

When making this strawberry oatmeal, I use a similar method to my homemade mug cakes (like this vegan chocolate mug cake ).

Make sure to use a heat-proof, microwave-safe dish with higher sides for when the oatmeal puffs up.

Heat for between 1:30-3:00 minutes on full power until it’s baked through – this will depend on your microwave power so start at 1:30 minutes, check, and increase in 15-20 second spurts.

How To Store

Store: for the best results, this strawberry cheesecake baked oatmeal is best consumed when warm, fresh from the oven. However, any leftovers can be stored covered in the refrigerator for 2-3 days (potentially longer, but I haven’t checked).

To freeze : wrap the strawberry baked oatmeal well and store for up to 1 month. Allow it to thaw in the refrigerator overnight before reheating.

To reheat: you can reheat the strawberry-baked oatmeal in the oven or microwave until warmed through. I suggest 45-60 seconds on high power in the microwave, increasing if needed or 10-15 minutes in the oven.
